Zucchini Madness!!

This is my first year having a garden in something like 10 years.....apparently I forgot that you only need to plant 1-2 zucchini plants.....so we have mega amounts of zucchini! I have been trying lots of new yummy recipes. Parmesan Garlic Zucchini Fries, Grilled Zucchini with lemon garlic sauce, and chocolate zucchini cake with homemade chocolate frosting have been favorites!



Yesterday I used my food processor for the first time and shredded up a couple of giant guys! I portioned it into 2 cup servings so I can freeze and use it for muffins and cakes this winter!


(Please ignore my repeated misspelling of zucchini!)

Tonight I made zucchini noodles with my spiralizer and cooked them with Alfredo sauce, mushrooms, onions, garlic and spices for a very delicious, and a little healthier then normal chicken Alfredo!

I found a recipe online for a Blueberry Lemon Zucchini Cake, I think I will try that next!

    Made that mistake a few years ago and did the same thing with the excess. However, it will come in handy over the winter. Blueberry Lemon Zucchini Cake? Let us know how that turns out....

    In my experience it was better to freeze made up items like muffins, quick bread, loaf cakes than just the shredded/grated product. www.Allrecipes.com has lots of ideas. If you have any boxed cake mixes, there is a formula to substitute grated Z. If you're overwhelmed, share with neighbours, food bank, colleagues, at rummage sale, church secretary may have suggestions for distribution to parishioners who like to bake.

    Our guys thought it was a hoot to run zucchini through the processor to create lasagna-like ribbons and we did our best to replicate lasagna or roll ups with a rasher of bacon substituting for pancetta.
